I used fondant to make little sushi toppers for cupcakes for my daughter's birthday. The sushi toppers are fairly easy to make.

For example, for the tobiko sushi, I colored the fondant orange to make the little shrimp roe, white fondant for the sushi and green/black fondant to replicate the seaweed to wrap around the sushi.

They held up quite well and the kids and adults were actually delighted with the sushi toppers.

For the salmon/tuna sushi, I used white fondant as the sushi base, red colored fondant for tuna and orange colored fondant for salmon. I used a mould for the salmon/tuna, but I guess you could just use the blunt part of the knife to "trace" the designs.

For the crabstick sushi, I wrapped orange/red fondant around white fondant, rolled them up then cut them to replicate the crabstick.
